Masala Vegetable Khichdi Recipe

Ingredients of Masala Vegetable Khichdi
1 Cup Rice
1 cup Chopped vegetables – Carrot, green peas, capsicum, cauliflower, etc.
1 medium Onion (chopped)
1 medium Tomato (chopped)
1 tsp Ginger Garlic Paste
2 tbsp Ghee
Whole spices of your choice
1 tsp Haldi
1 tsp Red Chilli Powder
Salt according to taste
How to Make Masala Vegetable Khichdi
1.In a pressure cooker, heat ghee and add whole spices like bay leaf, cardamom, cloves, cinnamon, and jeera.
2.After they start to splutter, add ginger-garlic paste. After some time add chopped onions and tomatoes too.
3.After a minute add all the chopped vegetables and cook until they are slightly soft.
4.Add haldi, red chili powder, and salt and mix well.
5.Add rice and mix well. Add around 3-4 cups water and pressure cook for 5 whistles.
6.Take off the heat, garnish with freshly chopped coriander, some ghee, and serve hot.
